Aperol Sunshine Flip
A velvety and bright cocktail with gin, Aperol, lemon juice, and a frothy egg white top, finished with a touch of orange bitters and salt.
Ingredients
- 1 1/2 fl oz, gin
- 1 frozen egg white cube (about 1 fl oz)
- 3/4 fl oz, lemon juice
- 1/2 fl oz, Aperol
- 2 tsp, granulated sugar
- 3 dashes, orange bitters
- Pinch, kosher salt
- 1 cup, ice cubes
Instructions
- In a cocktail shaker, combine gin, frozen egg white, lemon juice, Aperol, sugar, bitters, and salt.
- Vigorously shake until the egg white has melted and the drink is very foamy, for about 60 to 90 seconds.
- Add ice to the cocktail shaker and shake vigorously for an additional 30 seconds.
- Strain the mixture into a chilled coupe or rocks glass and serve.
