Ingredients

  • 1 1/2 fl oz, gin
  • 1 frozen egg white cube (about 1 fl oz)
  • 3/4 fl oz, lemon juice
  • 1/2 fl oz, Aperol
  • 2 tsp, granulated sugar
  • 3 dashes, orange bitters
  • Pinch, kosher salt
  • 1 cup, ice cubes

Instructions

  1. In a cocktail shaker, combine gin, frozen egg white, lemon juice, Aperol, sugar, bitters, and salt.
  2. Vigorously shake until the egg white has melted and the drink is very foamy, for about 60 to 90 seconds.
  3. Add ice to the cocktail shaker and shake vigorously for an additional 30 seconds.
  4. Strain the mixture into a chilled coupe or rocks glass and serve.
