Autumn Bourbon Bliss Shake

Ingredients
- 1 1/4 cups unfiltered apple cider
- 1/8 cup bourbon
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 tablespoon maple syrup
- 1/8 cup pumpkin puree
- 1 1/2 cups vanilla ice cream (about 3 medium scoops)
Instructions
- To make the cider reduction, bring apple cider to a boil in a small saucepan, then let it simmer until reduced by half. Let it cool and refrigerate for at least 1 hour.
- For the maple whipped cream, whip the cold heavy cream in a chilled bowl until soft peaks form, then gradually add in the maple syrup while continuing to whip.
- In a blender, combine the cider reduction, bourbon, cinnamon, ginger, maple syrup, and pumpkin puree. Add the vanilla ice cream and pulse until smooth.
