Ingredients

  • 1/4 cup roasted butternut pumpkin puree
  • 1 tbsp maple syrup
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tsp ground cinnamon
  • A pinch of freshly grated nutmeg
  • 1 sage leaf
  • 1 tbsp caster sugar
  • 3/4 cup vodka
  • Juice of 1/4 lemon
  • 1 egg white
  • Ice

Instructions

  1. Preheat the oven to 350°F.
  2. Combine the roasted butternut pumpkin, maple syrup, olive oil, cinnamon, nutmeg, and sage in a roasting pan. Roast for 45 minutes until caramelized and tender. Let it cool and discard the sage.
  3. Puree the roasted pumpkin mixture in a food processor.
  4. In a saucepan, dissolve sugar in water over medium heat, then cool completely.
  5. Mix the pumpkin puree and vodka, and chill for at least 2 hours to infuse.
  6. Strain the mixture through a sieve lined with a cheesecloth to remove solids.
  7. In a cocktail shaker half-filled with ice, combine half of the infused vodka mixture, lemon juice, and egg white. Shake well.
  8. Strain into a cocktail glass and repeat with the remaining vodka mixture, lemon juice, and egg white.
  9. Sprinkle with cinnamon and garnish with a sage leaf.
