Ingredients
- 1/4 cup granulated sugar
- 10 fresh sage leaves
- 1 egg white, beaten
- 1/2 cup honey
- 1/2 cup water
- 1 pear, peeled, cored and roughly chopped
- 8-10 fresh sage leaves
- 1 oz pear sage syrup
- 1/2 oz fresh lemon juice
- 1 oz Cognac
- 3 oz brut Champagne, chilled
- 1 candied sage leaf
Instructions
- In a shallow bowl, coat sage leaves with beaten egg white, then toss in granulated sugar and place on a parchment paper lined plate to dry.
- Place a bowl or container over the plate to allow air circulation and keep bugs away. Let the candied sage leaves dry for 8-12 hours until firm and crisp.
- In a small saucepan, simmer honey, water, and pear until the pears soften. Add sage leaves and simmer for another 5 minutes. Let the mixture cool and strain the syrup, discarding the solids. Store in the refrigerator for up to 2 weeks.
- In a cocktail shaker, combine pear sage syrup, lemon juice, and brandy, then pour into a flute.
- Top with chilled Champagne and garnish with a candied sage leaf. Enjoy!
