Ingredients

  • 1/4 cup granulated sugar
  • 10 fresh sage leaves
  • 1 egg white, beaten
  • 1/2 cup honey
  • 1/2 cup water
  • 1 pear, peeled, cored and roughly chopped
  • 8-10 fresh sage leaves
  • 1 oz pear sage syrup
  • 1/2 oz fresh lemon juice
  • 1 oz Cognac
  • 3 oz brut Champagne, chilled
  • 1 candied sage leaf

Instructions

  1. In a shallow bowl, coat sage leaves with beaten egg white, then toss in granulated sugar and place on a parchment paper lined plate to dry.
  2. Place a bowl or container over the plate to allow air circulation and keep bugs away. Let the candied sage leaves dry for 8-12 hours until firm and crisp.
  3. In a small saucepan, simmer honey, water, and pear until the pears soften. Add sage leaves and simmer for another 5 minutes. Let the mixture cool and strain the syrup, discarding the solids. Store in the refrigerator for up to 2 weeks.
  4. In a cocktail shaker, combine pear sage syrup, lemon juice, and brandy, then pour into a flute.
  5. Top with chilled Champagne and garnish with a candied sage leaf. Enjoy!
