Ingredients

  • 1 1/4 oz dry gin
  • 1/2 oz lemon juice
  • 1/2 oz aquafaba
  • 3 1/3 oz raspberry rhubarb sparkling water, chilled
  • Raspberries, for garnish
  • Ice cubes

Instructions

  1. In a cocktail shaker, combine the dry gin, lemon juice, and aquafaba.
  2. Add ice to the shaker, seal it, and shake vigorously for about 15 seconds.
  3. Fill a Collins glass with ice.
  4. Strain the gin mixture into the glass.
  5. Pour in the chilled raspberry rhubarb sparkling water.
  6. Garnish by threading three raspberries onto a cocktail pick and placing them in the glass.
