Ingredients

  • 1.50 tbsp sugar
  • 3 strawberries, hulled and chopped
  • 3 oz rosé wine
  • 1 tbsp strawberry liqueur
  • 1 oz chilled soda water
  • Extra halved strawberries, for garnish

Instructions

  1. In a saucepan, combine sugar and 1/2 cup of water. Heat and stir until the sugar is completely dissolved.
  2. Let the sugar syrup cool completely.
  3. Place the chopped strawberries in a blender and puree until smooth, adding a little water if necessary.
  4. Strain the strawberry puree into a large jug and stir in the cooled sugar syrup and rosé wine.
  5. Pour the mixture into a 2-quart metal container and freeze overnight.
  6. When ready to serve, use a fork to flake the frozen mixture into large ice crystals.
  7. In a separate jug, mix the strawberry liqueur and soda water.
  8. Pour the liqueur mixture into serving glasses, then top with the flaked frosé and garnish with halved strawberries.
