Ingredients

  • 0.50 oz unsalted butter, cubed
  • 2 tbsp dark brown sugar
  • 1 tbsp heavy cream
  • 0.25 tsp vanilla extract
  • Pinch of salt
  • 0.08 cup maple whiskey or bourbon
  • 0.50 cup plain seltzer

Instructions

  1. Melt the butter in a small heavy-bottomed saucepan.
  2. Add the brown sugar and simmer, whisking constantly until smooth and slightly lighter in color.
  3. Whisk in the cream and continue to cook until the sauce thickens.
  4. Remove from heat, whisk in the vanilla and salt.
  5. In a separate saucepan, warm the whiskey (or bourbon) and seltzer until simmering.
  6. Whisk the whiskey and seltzer mixture into the butterscotch and watch the drink magically bubble and foam.
  7. Divide into a heatproof glass and serve immediately.
