Ingredients
- 1 1/2 tsp coarse sugar
- 1 tangerine or clementine
- 3 sprigs rosemary
- 2 oz. rum
- Crushed ice
Instructions
- Place the coarse sugar in a small bowl.
- Slice the tangerine or clementine in half and dip the cut side into the sugar.
- Place the tangerine cut-side down in a cast-iron skillet over medium-high heat.
- Add about 3 sprigs of rosemary in the pan and let cook for about 2 minutes until the sugar on the tangerines caramelizes.
- Remove from heat and let the tangerines cool a bit before cutting each half into quarters.
- Put the tangerines, remaining sugar, and 1 oz. rum in a cocktail shaker.
- Muddle to release as much juice as possible from the tangerines.
- Add crushed ice to the shaker, shake well, and pour into an ice-filled glass.
- Garnish with the remaining rosemary.
