A spicy and tropical cocktail with a blend of aged rum, white rum, pineapple shrub, lime juice, and a dash of Tabasco Red, creating a perfect Caribbean sunset in a glass.
Ingredients
- 1 oz Aged rum
- 1 oz White rum
- 0.75 oz Red Sauce-Pineapple shrub
- 0.50 oz Lime Juice
- 2 dashes Angostura bitters
- Lime Wheel
- Red Sauce-Pineapple shrub:
- 0.75 oz Tabasco Original Red Sauce
- 1/2 cup Apple cider vinegar
- 1/2 cup fine sugar
- 250 grams fresh pineapple chunks
Instructions
- In a medium bowl, lightly crush the fresh pineapple chunks to release their flavor.
- Add sugar, vinegar, and Tabasco Red Sauce to the bowl and mix thoroughly.
- Pour the mixture into a sealable container and refrigerate for at least 2 hours, shaking occasionally.
- After refrigeration, strain out the pineapple chunks to yield 750 ml of shrub.
- In a shaker, combine aged rum, white rum, Red Sauce-Pineapple shrub, lime juice, and Angostura bitters.
- Shake vigorously, then fine strain the mixture into a chilled coupe or martini glass.
- Garnish with a lime wheel and enjoy!
