Ingredients

  • 1 oz Aged rum
  • 1 oz White rum
  • 0.75 oz Red Sauce-Pineapple shrub
  • 0.50 oz Lime Juice
  • 2 dashes Angostura bitters
  • Lime Wheel
  • Red Sauce-Pineapple shrub:
  • 0.75 oz Tabasco Original Red Sauce
  • 1/2 cup Apple cider vinegar
  • 1/2 cup fine sugar
  • 250 grams fresh pineapple chunks

Instructions

  1. In a medium bowl, lightly crush the fresh pineapple chunks to release their flavor.
  2. Add sugar, vinegar, and Tabasco Red Sauce to the bowl and mix thoroughly.
  3. Pour the mixture into a sealable container and refrigerate for at least 2 hours, shaking occasionally.
  4. After refrigeration, strain out the pineapple chunks to yield 750 ml of shrub.
  5. In a shaker, combine aged rum, white rum, Red Sauce-Pineapple shrub, lime juice, and Angostura bitters.
  6. Shake vigorously, then fine strain the mixture into a chilled coupe or martini glass.
  7. Garnish with a lime wheel and enjoy!
