Ingredients

  • 1 1/2 limes, cut into wedges
  • 20 fresh mint leaves
  • 2 1/2 tsp granulated sugar
  • handful ice
  • 2 1/2 fl oz white rum
  • splash soda water, to taste
  • fresh mint sprig, to garnish

Instructions

  1. In a sturdy highball glass, muddle or mash the limes, mint, and sugar to bruise the mint and release the lime juice.
  2. Add the ice to the glass.
  3. Pour the white rum over the ice.
  4. Add soda water to taste and stir well.
  5. Garnish with a mint sprig and serve.
