Ingredients

  • 2 tbsp pitted fresh cherries
  • 2 oz amaretto (almond-flavored liqueur)
  • 1 oz fresh lemon juice
  • 1/2 oz pasteurized egg whites
  • 1/2 cup chilled brut prosecco

Instructions

  1. Place fresh cherries in a glass container or jar and pour amaretto over cherries. Seal the container and let it sit in a cool, dry place for at least 48 hours or up to 2 weeks.
  2. Strain the cherries through a fine sieve over a bowl, reserving both the amaretto and cherries.
  3. Pour the amaretto into a large cocktail shaker or quart-sized mason jar. Add lemon juice and egg whites to the shaker.
  4. Add as much ice as possible, cover the shaker, and shake vigorously for 15 seconds.
  5. Strain about 1/4 cup of the mixture into a chilled cocktail coupe or Champagne flute.
  6. Top each serving with 1/4 cup of prosecco.
  7. Garnish with amaretto-soaked cherries, if desired, and serve immediately.
