Chilled Pimm's Mint Tea

Ingredients

  • 1 tea bag
  • 3-4 sprigs of mint
  • 3 tbsp granulated sugar
  • 1/3 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lemon juice
  • 2 oz Pimm's No 1
  • 2-3 sliced strawberries
  • 1 cup ice

Instructions

  1. Place the tea bag and mint sprigs in a jug and pour 4 cups of boiling water over them. Let it steep for 10 minutes, then remove the tea bag and half of the mint.
  2. Stir in the granulated sugar and allow the tea to cool completely. Once cooled, remove the remaining mint sprigs.
  3. Add the orange juice, lemon juice, and Pimm's No 1 to the tea, then chill thoroughly. This can be prepared a day in advance.
  4. When serving, pour the chilled mixture over ice and garnish with sliced strawberries and additional mint sprigs.
