Citrus Mint Pimm's Cooler

Ingredients
- 4 tea bags
- 0.70 oz mint
- 3.50 tbsp caster sugar
- juice of 2 large oranges
- juice of 2 lemons
- 2.70 fl oz Pimm's No 1
- a few sliced strawberries
- plenty of ice
Instructions
- Place the tea bags and half of the mint into a large jug.
- Pour 5 cups of boiling water over the tea bags and mint.
- Let it infuse for 10 minutes, then remove the tea bags and stir in the sugar.
- Once cooled, remove the mint, add the orange juice, lemon juice, and Pimm's No 1, and chill thoroughly. Can be made up to a day ahead.
- Serve over plenty of ice, with slices of orange, lemon, strawberry, and remaining mint sprigs.
