Ingredients

  • 4 tea bags
  • 0.70 oz mint
  • 3.50 tbsp caster sugar
  • juice of 2 large oranges
  • juice of 2 lemons
  • 2.70 fl oz Pimm's No 1
  • a few sliced strawberries
  • plenty of ice

Instructions

  1. Place the tea bags and half of the mint into a large jug.
  2. Pour 5 cups of boiling water over the tea bags and mint.
  3. Let it infuse for 10 minutes, then remove the tea bags and stir in the sugar.
  4. Once cooled, remove the mint, add the orange juice, lemon juice, and Pimm's No 1, and chill thoroughly. Can be made up to a day ahead.
  5. Serve over plenty of ice, with slices of orange, lemon, strawberry, and remaining mint sprigs.
