Citrus Rosemary Gin Sparkler

Ingredients
- 1 Clementine
- 3 leaves Fresh Rosemary
- 1/2 Lemon
- 1 oz Rosemary Simple Syrup
- 1.50 oz Gin
- 1/4 cup Ice Cubes
- 2 oz Sparkling Water (Topo Chico or similar)
- 1 tbsp Pure Cane Sugar
- 1 tbsp Water
- 1 sprig Fresh Rosemary (for garnish)
Instructions
- In a small saucepan, combine the pure cane sugar, water, and a sprig of fresh rosemary. Heat until the sugar melts, then simmer on medium-low heat for a few minutes. Transfer the syrup to a glass and let it cool completely.
- In a cocktail shaker, muddle 1 peeled clementine and the fresh rosemary leaves to release their juices and aroma.
- Add the juice of 1/2 lemon, the rosemary simple syrup, gin, and ice cubes to the shaker.
- Close the shaker and shake well to mix the ingredients.
- Pour the cocktail mixture over ice and top it off with sparkling water (Topo Chico or similar).
- Garnish with a sprig of fresh rosemary.
