Ingredients

  • 1.50 ounces whipped vodka (or vanilla vodka)
  • 1.50 ounces coconut rum
  • 2 ounces half and half
  • 1/2 ounce cream of coconut
  • Splash of pineapple juice
  • Honey for rimming
  • Chopped sweetened coconut for rimming
  • 1 marshmallow for garnish

Instructions

  1. In a shallow dish, spread a teaspoon of honey and another dish with chopped sweetened coconut. Rim the edge of a martini glass first in honey and then in coconut. Set aside.
  2. In a cocktail shaker filled with ice, combine the whipped vodka, coconut rum, half and half, cream of coconut, and a splash of pineapple juice.
  3. Shake vigorously, then strain the mixture into the prepared martini glass.
  4. Cut a small slit in a marshmallow and hang it on the edge of the glass as a final garnish.
