Ingredients
- 1/2 can full fat coconut milk
- 1 organic egg yolk
- 1 tablespoon maple syrup
- 3/8 teaspoon vanilla extract
- 1/8 teaspoon ground cinnamon
- Pinch of ground nutmeg
- Coconut whipped cream (optional)
- Extra cinnamon for garnish (optional)
Instructions
- Heat the coconut milk in a saucepan over low-medium heat.
- In a bowl, whisk the egg yolk, then slowly pour in some of the heated coconut milk while whisking continuously.
- Pour the egg and coconut milk mixture back into the saucepan and continue to cook, stirring constantly until the mixture thickens slightly.
- Remove from heat and stir in the maple syrup and vanilla extract.
- Refrigerate the eggnog until cool, for about 2-3 hours.
- Once chilled, pour the eggnog into a glass.
- Top with coconut whipped cream and a sprinkle of cinnamon before serving.
