Ingredients

  • 1/2 can full fat coconut milk
  • 1 organic egg yolk
  • 1 tablespoon maple syrup
  • 3/8 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • Coconut whipped cream (optional)
  • Extra cinnamon for garnish (optional)

Instructions

  1. Heat the coconut milk in a saucepan over low-medium heat.
  2. In a bowl, whisk the egg yolk, then slowly pour in some of the heated coconut milk while whisking continuously.
  3. Pour the egg and coconut milk mixture back into the saucepan and continue to cook, stirring constantly until the mixture thickens slightly.
  4. Remove from heat and stir in the maple syrup and vanilla extract.
  5. Refrigerate the eggnog until cool, for about 2-3 hours.
  6. Once chilled, pour the eggnog into a glass.
  7. Top with coconut whipped cream and a sprinkle of cinnamon before serving.
