Ingredients
- 2/3 cup coconut milk
- 2 tablespoons granulated sugar
- 1/8 teaspoon vanilla extract
- 1 large egg yolk
- 1/8 teaspoon ground cinnamon
- Pinch of nutmeg
- 1/8 cup hazelnut liqueur
- 1 egg white (optional)
- 2 teaspoons sweetened flaked coconut (for garnish, optional)
- 1/2 teaspoon cinnamon sugar (for garnish, optional)
Instructions
- In a medium saucepan, heat the coconut milk, 1 tablespoon of the sugar, and vanilla over medium low heat until steaming.
- In a bowl, whisk the remaining sugar into the egg yolk until smooth and pale in color.
- Slowly pour a small amount of the warmed coconut milk into the egg yolk while whisking continuously, then pour the mixture back into the saucepan.
- Add the cinnamon and nutmeg to the saucepan and stir constantly over medium low heat until the mixture thickens (about 3-5 minutes).
- Stir in the hazelnut liqueur and remove from heat.
- Place the saucepan in an ice bath and stir as the eggnog cools. Refrigerate for at least 2 hours or overnight.
- Optional: If using egg whites, beat the whites with a tablespoon of sugar until frothy, then gently fold into the cooled eggnog.
- Serve garnished with flaked coconut and a sprinkle of cinnamon sugar.
