Ingredients

  • 2/3 cup coconut milk
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/8 teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1/8 cup hazelnut liqueur
  • 1 egg white (optional)
  • 2 teaspoons sweetened flaked coconut (for garnish, optional)
  • 1/2 teaspoon cinnamon sugar (for garnish, optional)

Instructions

  1. In a medium saucepan, heat the coconut milk, 1 tablespoon of the sugar, and vanilla over medium low heat until steaming.
  2. In a bowl, whisk the remaining sugar into the egg yolk until smooth and pale in color.
  3. Slowly pour a small amount of the warmed coconut milk into the egg yolk while whisking continuously, then pour the mixture back into the saucepan.
  4. Add the cinnamon and nutmeg to the saucepan and stir constantly over medium low heat until the mixture thickens (about 3-5 minutes).
  5. Stir in the hazelnut liqueur and remove from heat.
  6. Place the saucepan in an ice bath and stir as the eggnog cools. Refrigerate for at least 2 hours or overnight.
  7. Optional: If using egg whites, beat the whites with a tablespoon of sugar until frothy, then gently fold into the cooled eggnog.
  8. Serve garnished with flaked coconut and a sprinkle of cinnamon sugar.
