Ingredients
- 2/3 cup coconut milk
- 2 tbsp granulated sugar
- 1/8 tsp vanilla extract
- 2 large egg yolks
- 1/4 tsp cinnamon
- Pinch of nutmeg
- 1 oz hazelnut liqueur
- 1 egg white (optional)
- 1 tsp sweetened flaked coconut (for garnish, optional)
- 1/2 tsp cinnamon sugar (for garnish, optional)
Instructions
- In a medium saucepan, heat the coconut milk, 1 tbsp of sugar, and vanilla over medium low heat, stirring occasionally until the sugar dissolves and the milk starts to steam.
- In a separate bowl, whisk the egg yolks with the remaining sugar until pale and smooth.
- Slowly pour a small amount of the warm coconut milk into the egg mixture, whisking constantly, then transfer the egg mixture back into the saucepan.
- Add the cinnamon and nutmeg to the saucepan, stirring constantly over medium low heat until the mixture thickens (about 3-5 minutes).
- Stir in the hazelnut liqueur, then remove the saucepan from the heat and place it in an ice bath, stirring as the eggnog cools. Refrigerate for at least 2 hours or overnight.
- If using egg whites, beat the whites with a bit of sugar until frothy, then gently fold them into the cooled eggnog. This step is optional.
- Serve the eggnog garnished with flaked coconut and a sprinkle of cinnamon sugar.
