Ingredients

  • 2/3 cup coconut milk
  • 2 tbsp granulated sugar
  • 1/8 tsp vanilla extract
  • 2 large egg yolks
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1 oz hazelnut liqueur
  • 1 egg white (optional)
  • 1 tsp sweetened flaked coconut (for garnish, optional)
  • 1/2 tsp cinnamon sugar (for garnish, optional)

Instructions

  1. In a medium saucepan, heat the coconut milk, 1 tbsp of sugar, and vanilla over medium low heat, stirring occasionally until the sugar dissolves and the milk starts to steam.
  2. In a separate bowl, whisk the egg yolks with the remaining sugar until pale and smooth.
  3. Slowly pour a small amount of the warm coconut milk into the egg mixture, whisking constantly, then transfer the egg mixture back into the saucepan.
  4. Add the cinnamon and nutmeg to the saucepan, stirring constantly over medium low heat until the mixture thickens (about 3-5 minutes).
  5. Stir in the hazelnut liqueur, then remove the saucepan from the heat and place it in an ice bath, stirring as the eggnog cools. Refrigerate for at least 2 hours or overnight.
  6. If using egg whites, beat the whites with a bit of sugar until frothy, then gently fold them into the cooled eggnog. This step is optional.
  7. Serve the eggnog garnished with flaked coconut and a sprinkle of cinnamon sugar.
