Ingredients

  • 1-2 tablespoons granulated sugar
  • 8 mint leaves
  • Juice of 1 lime
  • 1 ounce white rum
  • 1/2 ounce coconut rum
  • 1/4 cup coconut milk
  • 3/4 cup ice cubes
  • Club soda
  • Fresh mint for garnish
  • Fresh pomegranate arils for garnish

Instructions

  1. In a cocktail shaker or sturdy glass, combine sugar with fresh mint leaves and lime juice.
  2. Use a muddler to crush the mixture to release the mint oils.
  3. Fill the shaker/glass with ice, pour in white rum and coconut rum, cover and shake. If using a glass, stir to combine.
  4. Pour the mixture into a cocktail glass and top with club soda.
  5. Stir, taste, and add more sugar if desired.
  6. Garnish with fresh mint leaves and fresh pomegranate arils or fresh cranberries.
