Ingredients

  • 3.50 fl. oz full-fat coconut milk
  • 1.50 organic egg yolks
  • 1/4 tsp vanilla extract
  • 1 tbsp organic maple syrup OR 1 tbsp Swerve granular sugar replacement
  • A pinch of ground cinnamon
  • A pinch of ground nutmeg
  • A pinch of ground cloves
  • Rum or Brandy (optional - add a splash to individual serving)

Instructions

  1. Separate the egg yolks from the whites and set the whites aside for later use.
  2. Blend the coconut milk, egg yolks, vanilla extract, sweetener, and spices in a high-speed blender until smooth.
  3. Pour the mixture into a saucepan and heat slowly over medium heat until it starts to thicken, stirring frequently. Do not boil.
  4. Once thickened, remove from the heat and pour into a glass container. Chill in the refrigerator overnight.
  5. When ready to serve, stir in optional alcohol if desired.
