Ingredients

  • 2 cardamom pods
  • 3-4 peppercorns
  • 1 cinnamon stick
  • 1 star anise
  • 6 whole cloves
  • 1 tablespoon brown sugar
  • Zest/peel of 1/4 orange
  • 3/4 cup water
  • 2 tablespoons raisins
  • 1 oz rum
  • 6-8 blanched almonds
  • 6 oz dry or semi-sweet white wine
  • 1 cup apple cider

Instructions

  1. Place the raisins in a glass and cover them with rum to soak for a few hours.
  2. In a saucepan over low heat, combine the spices, brown sugar, orange peel, and water. Simmer the mixture covered for about an hour, ensuring the sugar dissolves. Add more water if necessary.
  3. Strain the extract and store it in a bottle in the fridge if not using immediately.
  4. Heat the apple cider in a large pot, then turn off the stove. Pour in the wine, the strained extract, soaked raisins, and any remaining rum from the glass.
  5. Heat the wine mixture until it is just hot enough to avoid boiling off the alcohol. Once the edges start to bubble, it is ready.
