A creamy and rich vegan twist on the classic White Russian, perfect for the holidays.
Ingredients
- 1/2 cup raw cashews
- 1 teaspoon maple syrup
- 1/2 vanilla bean pod, split lengthwise and seeds scraped out
- Pinch of salt
- 1.35 ounces vodka
- 0.67 ounce Tia Maria (or other vegan coffee liqueur)
Instructions
- Soak the cashews in 1 cup of boiling water for 15 minutes.
- Drain the cashews and blend them with maple syrup, vanilla, salt, and 3/4 cup of water until smooth.
- Strain the cashew milk through a muslin cloth for extra silkiness and set aside in the fridge.
- In a glass with ice, add the Tia Maria and vodka.
- Gently pour 1 ounce of the cashew milk over the back of a spoon for a layered effect.
- Stir before drinking.
