Edith's Lavender Gin Fizz
A refreshing and sophisticated gin fizz cocktail infused with lavender and Edith Grey tea, topped with sparkling wine for a touch of effervescence.
Ingredients
- 2 oz. Sipsmith VJOP London Dry Gin
- 1/2 oz. Edith Grey simple syrup
- 3/4 oz. lemon juice
- 1 lavender-infused egg white
- Schramsberg Blanc de Blanc
- Garnish with agave syrup stripe and Edith Grey tea
- 1 part Big Heart Tea Co. Edith Grey hot tea
- 1 part white sugar
- 1 egg
- Dried lavender buds
Instructions
- To prepare the lavender-infused egg white, place the whole egg in a sealed container with a thick bed of lavender buds and refrigerate for two to three days.
- For the Edith Grey simple syrup, brew the tea, remove the tea bags, and combine with an equal amount of sugar while hot. Stir until clear and let cool.
- Once the egg and syrup are ready, combine all ingredients except the sparkling wine in a shaker.
- Dry shake the ingredients, then add ice and continue shaking for at least thirty seconds.
- Strain the mixture into a glass and top with the sparkling wine. Garnish the glass with a stripe of agave syrup and Edith Grey tea.
