Ingredients

  • 2 oz. Sipsmith VJOP London Dry Gin
  • 1/2 oz. Edith Grey simple syrup
  • 3/4 oz. lemon juice
  • 1 lavender-infused egg white
  • Schramsberg Blanc de Blanc
  • Garnish with agave syrup stripe and Edith Grey tea
  • 1 part Big Heart Tea Co. Edith Grey hot tea
  • 1 part white sugar
  • 1 egg
  • Dried lavender buds

Instructions

  1. To prepare the lavender-infused egg white, place the whole egg in a sealed container with a thick bed of lavender buds and refrigerate for two to three days.
  2. For the Edith Grey simple syrup, brew the tea, remove the tea bags, and combine with an equal amount of sugar while hot. Stir until clear and let cool.
  3. Once the egg and syrup are ready, combine all ingredients except the sparkling wine in a shaker.
  4. Dry shake the ingredients, then add ice and continue shaking for at least thirty seconds.
  5. Strain the mixture into a glass and top with the sparkling wine. Garnish the glass with a stripe of agave syrup and Edith Grey tea.
