Ingredients

  • 1 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
  • 1.50 large egg yolks
  • 2 tablespoons granulated sugar
  • 1/4 cup heavy cream
  • Whipped cream for garnish

Instructions

  1. In a small saucepan, combine milk, cinnamon, nutmeg, and vanilla. Slowly bring the mixture to a low boil over low heat.
  2. In a medium bowl, whisk egg yolks and sugar until light and pale in color, about 2-3 minutes.
  3. Gradually add a small amount of the heated milk mixture to the eggs, whisking constantly to temper the eggs. Continue this process until all the milk is incorporated with the egg mixture.
  4. Return the milk mixture to the saucepan and cook over medium heat until slightly thickened and the mixture coats the back of a spoon. Do not bring the mixture to a boil.
  5. Remove from heat and stir in the heavy cream.
  6. Chill the mixture for several hours.
  7. Serve with a dollop of whipped cream and a sprinkle of ground cinnamon, if desired.
