Ingredients

  • 1/4 cup elderflower syrup (cordial)
  • 1/2 cup strawberries, hulled and chopped
  • 3 large scoops vanilla strawberry ice cream
  • 3/4 cup mineral water or club soda

Instructions

  1. In a medium saucepan, combine elderflower syrup and chopped strawberries.
  2. Bring the mixture to a boil over medium heat and simmer until the strawberries are tender.
  3. Strain the mixture into a jar and allow it to cool to room temperature.
  4. Store the cooked strawberries in the fridge.
  5. To serve, divide the syrup between a large glass (about 16 oz. in volume).
  6. Add 2-3 scoops of ice cream to the glass.
  7. Pour the mineral water over the ice cream until it reaches the edge of the glass.
  8. Add a straw to the drink and enjoy!
