Ingredients

  • 4 cucumber slices
  • 2 strawberries, sliced
  • 4 melon balls
  • 2-3 slices of lemon
  • 3 oz Pimms No 1
  • 1 1/2 oz St-Germain Elderflower liquor
  • 2 tbsp lemon juice
  • Crushed ice
  • Ginger beer, for topping
  • Fresh thyme and mint, for serving

Instructions

  1. In a tall glass, layer the cucumber slices, sliced strawberries, melon balls, and lemon slices, filling the glass about halfway.
  2. Pour in the Pimms, St-Germain Elderflower liquor, and lemon juice over the cucumbers and fruit. Gently stir to combine.
  3. Add crushed ice to the glass.
  4. Top with ginger beer.
