Ingredients

  • Handful of fennel fronds
  • 3 lemon wheels
  • 2 oz dry sparkling wine
  • 3/4 oz Campari
  • 1/2 oz simple syrup
  • One 2-inch-long strip of lemon peel
  • Ice

Instructions

  1. In a cocktail shaker, muddle the fennel fronds with the lemon wheels, sparkling wine, Campari, and simple syrup.
  2. Add ice to the shaker and shake well.
  3. Strain the mixture into an ice-filled rocks glass.
  4. Squeeze the lemon peel over the drink and add it to the glass.
  5. Garnish with the fennel sprig and serve.
