Ingredients

  • 1 egg (separated into yolk and white)
  • 2 tablespoons superfine sugar
  • Pinch of salt
  • 1/3 teaspoon vanilla extract
  • 1/4 teaspoon grated nutmeg, plus extra for garnish
  • 1/3 cup brandy
  • 2 tablespoons milk

Instructions

  1. Separate the egg yolk and white.
  2. Beat the egg yolk, gradually adding 1 tablespoon of sugar until dissolved. Mix in the vanilla extract, nutmeg, and salt until the mixture becomes thick and pale yellow.
  3. Slowly add the brandy, then mix in the milk.
  4. Cover the mixture and chill in the refrigerator for at least one hour.
  5. Whip the egg white to soft peaks just before serving.
  6. Gradually beat in the remaining 1 tablespoon of sugar until it forms soft peaks.
  7. Gently fold the egg white into the chilled egg yolk mixture.
