Ingredients

  • 1 large egg (separated into yolk and white)
  • 2 tablespoons granulated sugar
  • 1/3 cup whole milk
  • 2 tablespoons heavy whipping cream
  • 1/8 to 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon vanilla extract
  • 2 to 3 tablespoons bourbon (optional)

Instructions

  1. Separate the egg yolk from the white.
  2. In a mixing bowl, whisk the egg yolk and sugar until pale and fluffy.
  3. In a saucepan, heat the milk, cream, and nutmeg until steaming.
  4. Temper the eggs by adding a ladle of the hot milk mixture and whisking it into the egg mixture.
  5. Slowly pour the egg mixture back into the saucepan, whisking constantly.
  6. Heat over medium, stirring constantly, until the mixture thickens (do not boil).
  7. Remove from heat and stir in the vanilla extract and bourbon.
  8. Refrigerate for at least 1 hour before serving.
  9. Serve with a sprinkle of freshly grated nutmeg.
