Ingredients
- 1 large pasteurized egg, separated
- 3 tablespoons sugar
- 1 tablespoon brandy or rum
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 1/8 teaspoon bitters (preferably Angostura)
- 1/8 teaspoon cream of tartar, optional
- 3/4 cup boiling water or hot 2% milk
- 1 oz brandy
- 1 oz rum
- Freshly grated nutmeg, optional
Instructions
- In a large bowl, beat the egg yolks until thin and loose, about 1 minute.
- Gradually beat in the sugar, brandy, vanilla, pumpkin pie spice, and bitters until the mixture is thick and frothy, about 3-5 minutes.
- In another large bowl, beat the egg whites (and, if desired, cream of tartar) with clean beaters on high speed until stiff but not dry.
- Fold a fourth of the beaten egg whites into the yolk mixture until no white streaks remain.
- Fold in the remaining egg whites until well combined.
- Refrigerate the mixture, covered, until ready to serve.
- For each serving, place 3/4 cup of the mixture in a large mug.
- Add boiling water, brandy, and rum, then stir until blended.
- If desired, top with freshly grated nutmeg.
