Ingredients

  • 1 large pasteurized egg, separated
  • 3 tablespoons sugar
  • 1 tablespoon brandy or rum
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/8 teaspoon bitters (preferably Angostura)
  • 1/8 teaspoon cream of tartar, optional
  • 3/4 cup boiling water or hot 2% milk
  • 1 oz brandy
  • 1 oz rum
  • Freshly grated nutmeg, optional

Instructions

  1. In a large bowl, beat the egg yolks until thin and loose, about 1 minute.
  2. Gradually beat in the sugar, brandy, vanilla, pumpkin pie spice, and bitters until the mixture is thick and frothy, about 3-5 minutes.
  3. In another large bowl, beat the egg whites (and, if desired, cream of tartar) with clean beaters on high speed until stiff but not dry.
  4. Fold a fourth of the beaten egg whites into the yolk mixture until no white streaks remain.
  5. Fold in the remaining egg whites until well combined.
  6. Refrigerate the mixture, covered, until ready to serve.
  7. For each serving, place 3/4 cup of the mixture in a large mug.
  8. Add boiling water, brandy, and rum, then stir until blended.
  9. If desired, top with freshly grated nutmeg.
