Ingredients

  • 1 egg (separated into yolk and white)
  • 2 tablespoons superfine sugar
  • A pinch of salt
  • 1/3 teaspoon vanilla extract
  • A pinch of grated nutmeg, plus extra for garnish
  • 1/3 cup brandy
  • 2 tablespoons milk

Instructions

  1. Start by beating the egg yolk and slowly adding 2 tablespoons of sugar until dissolved. Mix in the vanilla extract, nutmeg, and salt until the mixture becomes thick and pale yellow.
  2. Slowly beat in the brandy, then add the milk and mix well.
  3. Cover the mixture and chill it in the refrigerator for at least an hour.
  4. Just before serving, whip the egg white to soft peaks, gradually beat in the remaining sugar, and continue beating until soft peaks form again.
  5. Gently fold the whipped egg whites into the chilled egg yolk mixture.
  6. Serve the eggnog in a glass and sprinkle a pinch of nutmeg on top for a festive garnish.
