Ingredients

  • 1 ripe Fuyu persimmon, cut into 1/2-inch cubes
  • 1/2 cup water
  • Freshly grated nutmeg (to taste)
  • 1 sprig rosemary
  • 1 cup brown sugar
  • 1 fluid ounce orange liqueur (such as Grand Marnier)
  • 1/2 fluid ounce persimmon syrup
  • 1/4 fluid ounce fresh lemon juice
  • 4 fluid ounces dry Champagne
  • Small sprig of rosemary, for garnish
  • 1 cranberry, for garnish

Instructions

  1. In a medium saucepan over medium heat, caramelize the persimmon pieces for 5 to 10 minutes, stirring frequently to prevent burning.
  2. Add water, rosemary, and freshly grated nutmeg to the pan, bring to a boil, then stir in the brown sugar until dissolved. Remove from heat, strain, and let the syrup cool.
  3. In a cocktail shaker with ice, combine the orange liqueur, persimmon syrup, and lemon juice. Shake well and strain into a Champagne flute or saucer.
  4. Top with Champagne and garnish with a sprig of rosemary and a cranberry.
