Festive Persimmon Spritz
A sparkling cocktail made with persimmon syrup, orange liqueur, lemon, and dry Champagne, garnished with a sprig of rosemary and a cranberry.
Ingredients
- 1 ripe Fuyu persimmon, cut into 1/2-inch cubes
- 1/2 cup water
- Freshly grated nutmeg (to taste)
- 1 sprig rosemary
- 1 cup brown sugar
- 1 fluid ounce orange liqueur (such as Grand Marnier)
- 1/2 fluid ounce persimmon syrup
- 1/4 fluid ounce fresh lemon juice
- 4 fluid ounces dry Champagne
- Small sprig of rosemary, for garnish
- 1 cranberry, for garnish
Instructions
- In a medium saucepan over medium heat, caramelize the persimmon pieces for 5 to 10 minutes, stirring frequently to prevent burning.
- Add water, rosemary, and freshly grated nutmeg to the pan, bring to a boil, then stir in the brown sugar until dissolved. Remove from heat, strain, and let the syrup cool.
- In a cocktail shaker with ice, combine the orange liqueur, persimmon syrup, and lemon juice. Shake well and strain into a Champagne flute or saucer.
- Top with Champagne and garnish with a sprig of rosemary and a cranberry.
