Ingredients

  • 8-10 fresh mint leaves
  • 1 oz lime juice
  • 2 tbsp caster sugar
  • 1.50 oz white rum
  • 3.50 oz cranberry juice
  • Soda water, to top up
  • Pomegranate seeds, for garnish

Instructions

  1. In a tumbler or highball glass, muddle together the mint leaves, lime juice, and sugar.
  2. Pour in the white rum and stir well.
  3. Add a handful of ice cubes to the glass.
  4. Pour the cranberry juice over the ice.
  5. Top up with soda water.
  6. Garnish with a sprig of mint leaves and a few pomegranate seeds.
