Ingredients
- 1/4 cup heavy cream
- 1 large egg yolk
- 1 tablespoon sugar
- 1/2 cup whole milk
- Pinch of salt
- 1 tablespoon dark rum
- Pinch of ground nutmeg
Instructions
- In a bowl, whisk together 1/4 cup cream, egg yolk, and sugar until pale yellow.
- In a saucepan, bring milk and salt to a simmer.
- Slowly pour the hot milk mixture into the yolk mixture, whisking constantly.
- Return the mixture to the saucepan and cook until it reaches 160 degrees, whisking constantly.
- Pour the eggnog into a clean bowl, stir in the rum and nutmeg, and place the bowl in an ice bath to cool.
- Whip the remaining 1/4 cup cream until soft peaks form.
- Fold the whipped cream into the chilled eggnog.
- Serve garnished with extra nutmeg.
