Ingredients

  • 1/4 cup heavy cream
  • 1 large egg yolk
  • 1 tablespoon sugar
  • 1/2 cup whole milk
  • Pinch of salt
  • 1 tablespoon dark rum
  • Pinch of ground nutmeg

Instructions

  1. In a bowl, whisk together 1/4 cup cream, egg yolk, and sugar until pale yellow.
  2. In a saucepan, bring milk and salt to a simmer.
  3. Slowly pour the hot milk mixture into the yolk mixture, whisking constantly.
  4. Return the mixture to the saucepan and cook until it reaches 160 degrees, whisking constantly.
  5. Pour the eggnog into a clean bowl, stir in the rum and nutmeg, and place the bowl in an ice bath to cool.
  6. Whip the remaining 1/4 cup cream until soft peaks form.
  7. Fold the whipped cream into the chilled eggnog.
  8. Serve garnished with extra nutmeg.
