Ingredients

  • 1/2 cup milk
  • 1/4 teaspoon ground cinnamon, plus extra for garnish if desired
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 1/4 cup heavy cream or heavy whipping cream
  • Whipped cream for garnish if desired

Instructions

  1. In a small saucepan, combine milk, cinnamon, nutmeg, and vanilla. Slowly bring the mixture to a low boil over low heat.
  2. In a medium bowl, whisk the egg yolk and sugar until light and pale in color, about 2-3 minutes.
  3. Gradually add a small amount of the heated milk mixture to the eggs, whisking constantly to temper the eggs. Continue adding small amounts of heated milk to eggs, whisking constantly until all the milk is incorporated with the egg mixture.
  4. Return the milk mixture to the saucepan and cook over medium heat until slightly thick and the mixture coats the back of the spoon. Do not bring the mixture to a boil.
  5. Remove from heat and stir in the heavy cream.
  6. Chill the mixture for several hours.
  7. To serve, add whipped cream and a sprinkle of ground cinnamon, if desired.
