Ingredients

  • 1 clementine
  • 1/2 lemon
  • 1/2 lime
  • 2 tbsp sugar
  • 2 whole cloves
  • 1 cinnamon stick
  • 1 fresh bay leaf
  • 1/4 whole nutmeg, grated
  • 1/2 vanilla bean
  • 1 star anise
  • 1 cup good red wine

Instructions

  1. In a pot, combine sugar, clementine, lemon and lime peel, and the juice of the clementine.
  2. Add cloves, cinnamon, bay leaf, and grated nutmeg.
  3. Split the vanilla bean and scrape the seeds out, then add both the seeds and the bean to the pot.
  4. Pour in 1 cup of wine and bring the mixture to a boil, then simmer for about 5 minutes until it turns into a syrup.
  5. Add the rest of the wine, heat to desired temperature, and keep warm for serving.
  6. Serve warm in a thick glass or a china tea cup.
