Ingredients

  • 1/2 cup fresh or frozen raspberries
  • 2 tablespoons raw sugar
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon baking soda
  • 10 oz chilled sparkling water
  • 1 tablespoon pouring cream
  • Whipped cream, cotton candy, and fresh raspberries for serving

Instructions

  1. In a small saucepan, combine raspberries, sugar, and vanilla. Heat on medium-low until it gently boils, then remove from heat.
  2. Stir in the baking soda and allow the mixture to cool slightly. Strain the cordial into a glass jar and refrigerate until ready to use.
  3. When serving, divide the raspberry cordial equally between two 14 oz glasses (about 3 tablespoons per glass).
  4. Fill each glass about 2/3 full with chilled sparkling water.
  5. Add a tablespoon of pouring cream to each glass.
  6. Top with whipped cream, cotton candy, and fresh raspberries. Serve immediately.
