Frosty Blue Lagoon Cocktail
A tropical and refreshing cocktail with a vibrant blue color, featuring pineapple juice, Blue Curacao, rum, and cream of coconut, and rimmed with coconut flakes.
Ingredients
- 1/2 cup pineapple juice
- 1/4 cup Blue Curacao liquor
- 1/4 cup light rum
- 1/4 cup cream of coconut
- 1.50 cups crushed ice
- 2 tablespoons sweetened coconut flakes for rimming
- light corn syrup for rimming
Instructions
- Spread a small amount of corn syrup on a plate.
- Sprinkle coconut flakes on another plate.
- Dip the rim of your glass in the corn syrup, then in the coconut flakes. Set aside.
- In a blender, combine the crushed ice, pineapple juice, Blue Curacao, rum, and cream of coconut. Blend until smooth.
- Pour the mixture into the prepared glasses and serve immediately.
