Ingredients

  • 1 egg (separated into yolk and white)
  • 2 tbsp superfine sugar
  • Pinch of salt
  • 1/3 tsp vanilla extract
  • 1/4 tsp grated nutmeg, plus more for garnish
  • 1/3 cup brandy
  • 2 tbsp milk

Instructions

  1. In a mixing bowl, beat the egg yolk and slowly add the superfine sugar, mixing until dissolved. Then add the vanilla extract, nutmeg, and salt, and continue mixing until the mixture becomes thick and pale yellow.
  2. Gradually beat in the brandy, followed by the milk and heavy cream. Ensure the mixture is well combined.
  3. Cover the mixture and chill it in the refrigerator for at least one hour.
  4. Prior to serving, whip the egg white until soft peaks form. Gradually beat in the remaining superfine sugar until soft peaks form again.
  5. Gently fold the whipped egg whites into the chilled egg yolk mixture.
