Ingredients

  • 2 oz pisco liquor
  • 1 oz fresh lime juice (about one lime)
  • 3/4 oz simple syrup
  • 1 fresh egg white
  • Angostura bitters (to taste)

Instructions

  1. Squeeze enough lime(s) to obtain fresh juice.
  2. Combine pisco, lime juice, simple syrup, and egg white in a cocktail shaker.
  3. Shake vigorously for about 10 seconds until the liquid becomes frothy.
  4. Add ice to the cocktail shaker and shake again for approximately 10 seconds to chill the liquid.
  5. Strain the mixture into a cocktail glass.
  6. Garnish with a dash of bitters on top of the froth, to taste.
