Ingredients

  • 1/2 cup ice cubes
  • 3 tablespoons pineapple juice
  • 1 tablespoon white rum
  • 1 tablespoon blue curaçao
  • 1 tablespoon cream of coconut
  • 2 tablespoons sweetened shredded coconut
  • 1/2 tablespoon clear corn syrup

Instructions

  1. In a small bowl, pour clear corn syrup.
  2. In another small bowl, place sweetened shredded coconut.
  3. Dip the rim of a glass in the corn syrup, then in the shredded coconut, coating it evenly.
  4. In a blender, combine ice cubes, pineapple juice, white rum, blue curaçao, and cream of coconut.
  5. Blend until smooth.
  6. Pour the cocktail into the prepared glass.
