Ingredients

  • 1 1/4 cups sugar
  • 1 cup water
  • 5 sprigs fresh thyme
  • 4 cups cold water
  • 1 1/2 cups fresh squeezed lemon juice
  • 1 cup gin
  • Fresh thyme for garnish

Instructions

  1. In a medium saucepan, combine sugar, 1 cup water, and thyme to make thyme-infused simple syrup.
  2. Bring the mixture to a boil, stirring constantly until the sugar has dissolved.
  3. Remove from heat, cover with a lid, and let it cool for 15 minutes. Then remove and discard the thyme.
  4. In a glass pitcher, combine the thyme-infused simple syrup, remaining water, lemon juice, and gin.
