Ingredients

  • 1.50 oz 100% Agave tequila
  • 2 tbsp Lime juice
  • 1.50 tbsp Rosemary ginger simple syrup
  • 1 splash Carbonated water
  • Ice
  • Sea salt (for rimming)
  • 1/4 cup Coconut sugar
  • 1/4 cup Water
  • 1/2 inch Fresh ginger (chopped)
  • 1 small sprig Fresh rosemary

Instructions

  1. In a small sauce pot, combine coconut sugar, water, fresh ginger, and a sprig of fresh rosemary. Bring to a boil, then turn off the heat and let it sit for 30 minutes to infuse flavors. Strain the mixture into a jar and refrigerate until ready to use. This is the rosemary ginger simple syrup.
  2. Moisten the rim of a glass with lime and dip it into sea salt to rim the glass.
  3. In a cocktail shaker or jar, combine tequila, lime juice, and rosemary ginger simple syrup. Shake well.
  4. Strain the mixture into the rimmed glass filled with ice.
  5. Top with a splash of carbonated water.
