Ingredients

  • 4 gingersnaps, divided
  • 1 tbsp honey
  • 1 1/2 oz vanilla vodka
  • 1 oz Irish cream liqueur (such as Baileys)
  • 2 tbsp ginger syrup
  • 2 tbsp half-and-half
  • Whipped cream

Instructions

  1. For the Ginger Syrup: Combine water, granulated sugar, and chopped fresh ginger in a small saucepan. Simmer until sugar is dissolved, then let it stand for 30 minutes before straining into a container. Refrigerate for up to 2 weeks.
  2. For the Gingerbread Martini: Place 3 gingersnaps in a resealable bag and crush them. Dip the martini glass rim in honey, then in the crushed cookies to coat.
  3. Fill a cocktail shaker two-thirds full with ice. Add vodka, liqueur, ginger syrup, and half-and-half. Shake well until combined and chilled.
  4. Strain the mixture into the prepared martini glass and garnish with whipped cream and the remaining gingersnap. Serve immediately.
