Ingredients

  • 4 gingersnaps
  • 1 tablespoon honey
  • 1 1/2 ounces vanilla vodka
  • 1 ounce Irish cream liqueur (such as Baileys)
  • 2 tablespoons ginger syrup
  • 2 tablespoons half-and-half
  • Whipped cream

Instructions

  1. To make the Ginger Syrup, combine water, granulated sugar, and chopped fresh ginger in a saucepan. Simmer until sugar is dissolved, then let it stand for 30 minutes before straining into an airtight container.
  2. Place 3 gingersnaps in a resealable plastic bag and crush them with a rolling pin or heavy skillet. Transfer the crushed cookies to a plate.
  3. Dip the rim of a martini glass into honey, then into the crushed cookies to coat lightly.
  4. Fill a cocktail shaker with ice and add vodka, Irish cream liqueur, ginger syrup, and half-and-half. Shake until well combined and chilled.
  5. Strain the mixture into the prepared martini glass and garnish with whipped cream and the remaining gingersnap. Serve immediately.
