Ingredients
- 1 tbsp dried hibiscus petals
- 3/4 cup boiling water
- 1/4 cup fresh lime juice
- 1/4 cup ginger liqueur (such as Domaine de Canton(r))
- 1/4 cup ginger beer
- 1 sprig fresh mint for garnish
- fresh ginger, peeled and thinly sliced
Instructions
- Steep hibiscus petals in boiling water for 5 minutes.
- Strain the mixture into a heatproof bowl set in a bowl of ice to speed up the cooling process.
- Allow the mixture to cool completely.
- Transfer the hibiscus infusion to a small pitcher.
- Stir in the lime juice and ginger liqueur.
- Pour the mixture into an ice-filled Collins glass (about 5 oz.).
- Top the glass with 1 oz. of ginger beer.
- Garnish with a sprig of fresh mint and thinly sliced ginger.
