Ingredients

  • 1 tbsp dried hibiscus petals
  • 3/4 cup boiling water
  • 1/4 cup fresh lime juice
  • 1/4 cup ginger liqueur (such as Domaine de Canton(r))
  • 1/4 cup ginger beer
  • 1 sprig fresh mint for garnish
  • fresh ginger, peeled and thinly sliced

Instructions

  1. Steep hibiscus petals in boiling water for 5 minutes.
  2. Strain the mixture into a heatproof bowl set in a bowl of ice to speed up the cooling process.
  3. Allow the mixture to cool completely.
  4. Transfer the hibiscus infusion to a small pitcher.
  5. Stir in the lime juice and ginger liqueur.
  6. Pour the mixture into an ice-filled Collins glass (about 5 oz.).
  7. Top the glass with 1 oz. of ginger beer.
  8. Garnish with a sprig of fresh mint and thinly sliced ginger.
