Ingredients

  • 2 oz Blended Scotch whisky
  • 1.50 oz Freshly squeezed pink grapefruit juice
  • 0.50 oz Freshly squeezed lemon juice
  • 0.50 oz Rich sugar syrup (2 parts sugar to 1 part water, 65.0degBrix)
  • 0.70 oz Pasteurized egg white (or aquafaba)
  • 3 dashes Peychaud's or Creole bitters
  • 2.50 oz Pink grapefruit soda

Instructions

  1. Shake the first 6 ingredients with ice and strain back into the shaker.
  2. Dry shake (without ice) and slowly pour 2/3rds of the contents from a higher than normal height into a chilled empty glass (no ice in glass) while simultaneously pouring soda with your other hand.
  3. Allow the cocktail to settle for at least a minute before topping off with the remaining contents of the shaker, allowing the head to rise like a souffle.
