Ingredients
- 2 oz Blended Scotch whisky
- 1.50 oz Freshly squeezed pink grapefruit juice
- 0.50 oz Freshly squeezed lemon juice
- 0.50 oz Rich sugar syrup (2 parts sugar to 1 part water, 65.0degBrix)
- 0.70 oz Pasteurized egg white (or aquafaba)
- 3 dashes Peychaud's or Creole bitters
- 2.50 oz Pink grapefruit soda
Instructions
- Shake the first 6 ingredients with ice and strain back into the shaker.
- Dry shake (without ice) and slowly pour 2/3rds of the contents from a higher than normal height into a chilled empty glass (no ice in glass) while simultaneously pouring soda with your other hand.
- Allow the cocktail to settle for at least a minute before topping off with the remaining contents of the shaker, allowing the head to rise like a souffle.
