Ingredients

  • 1 ripe peach (pitted and quartered)
  • 2-3 fresh basil leaves
  • 3/4 tablespoon honey
  • Juice of 1/4 lemon (about 3/4 tablespoon)
  • 2 ounces lemon rum
  • 1/2 ounce lemon lime soda
  • Ice

Instructions

  1. Preheat a gas grill to high heat (450°F - 500°F).
  2. Cook the peach quarters covered over direct heat for 2-3 minutes per side until softened. Remove from the grill and cut the peaches into 1-inch pieces. Allow them to cool.
  3. In a pitcher, muddle the grilled peaches, basil, honey, and lemon juice together to release the juice and combine the flavors.
  4. Add the lemon rum and lemon lime soda to the pitcher, then stir to combine.
  5. To serve, pour the cocktail into a lowball glass filled partway with ice. Optionally, strain the cocktail into the glass using a Hawthorne strainer, or allow some of the muddled peaches to fall into the glass.
