Ingredients
- 1 ripe peach (pitted and quartered)
- 2-3 fresh basil leaves
- 3/4 tablespoon honey
- Juice of 1/4 lemon (about 3/4 tablespoon)
- 2 ounces lemon rum
- 1/2 ounce lemon lime soda
- Ice
Instructions
- Preheat a gas grill to high heat (450°F - 500°F).
- Cook the peach quarters covered over direct heat for 2-3 minutes per side until softened. Remove from the grill and cut the peaches into 1-inch pieces. Allow them to cool.
- In a pitcher, muddle the grilled peaches, basil, honey, and lemon juice together to release the juice and combine the flavors.
- Add the lemon rum and lemon lime soda to the pitcher, then stir to combine.
- To serve, pour the cocktail into a lowball glass filled partway with ice. Optionally, strain the cocktail into the glass using a Hawthorne strainer, or allow some of the muddled peaches to fall into the glass.
