Ingredients

  • 3 oz white wine, such as Chardonnay
  • Juice and zest of 1 large lemon (about 2 tbsp juice and 1 tsp zest)
  • 2 tbsp sugar
  • 2-3 sprigs lemon thyme
  • Ice
  • 6 oz tonic water

Instructions

  1. In a saucepan, combine white wine, lemon juice, 1/3 cup of water, and sugar. Bring to a boil.
  2. Add lemon zest to the mixture and reduce the heat to medium-low. Let it simmer for 5 minutes.
  3. Remove the saucepan from heat, add 1 bunch of thyme, and let it steep for 15 minutes.
  4. While the mixture is still warm, add a few more thyme sprigs, additional sugar, and lemon juice if desired.
  5. Strain the wine mixture into a container and place the container in a larger bowl filled halfway with ice. Add water to cover the ice and chill until cold and slushy, about 8 hours.
  6. Divide the chilled mixture among glasses and top off with tonic water. Add ice if desired and garnish with thyme sprigs.
