Ingredients

  • 3/8 cup water
  • 1 1/3 tbsp dried hibiscus flowers
  • 1 (1-inch) thinly sliced ginger piece
  • 2 1/3 tsp sugar
  • 1/2 cup cold ginger ale
  • 1/2 cup cold Prosecco or Champagne
  • ice cubes
  • lemon slices (optional for garnish)

Instructions

  1. In a small pot, combine water, hibiscus flowers, and ginger over high heat.
  2. Bring to a boil and simmer for 20 minutes.
  3. Add the sugar and stir until melted in the last minute of simmering.
  4. Strain the syrup into a heatproof bowl and let it cool to room temperature.
  5. Reserve half of the flowers in a small bowl and let them cool to room temperature.
  6. Once cooled, cover the syrup and flowers with plastic wrap and keep in the fridge.
  7. When ready to serve, combine the syrup, ginger ale, and Prosecco in a large pitcher or glass bowl.
  8. Add ice, reserved flower petals, and lemon slices if desired.
  9. Serve immediately.
