Hibiscus Ginger Fizz

Ingredients
- 3/8 cup water
- 1 1/3 tbsp dried hibiscus flowers
- 1 (1-inch) thinly sliced ginger piece
- 2 1/3 tsp sugar
- 1/2 cup cold ginger ale
- 1/2 cup cold Prosecco or Champagne
- ice cubes
- lemon slices (optional for garnish)
Instructions
- In a small pot, combine water, hibiscus flowers, and ginger over high heat.
- Bring to a boil and simmer for 20 minutes.
- Add the sugar and stir until melted in the last minute of simmering.
- Strain the syrup into a heatproof bowl and let it cool to room temperature.
- Reserve half of the flowers in a small bowl and let them cool to room temperature.
- Once cooled, cover the syrup and flowers with plastic wrap and keep in the fridge.
- When ready to serve, combine the syrup, ginger ale, and Prosecco in a large pitcher or glass bowl.
- Add ice, reserved flower petals, and lemon slices if desired.
- Serve immediately.
